Quinoa Salad with Hemp Hearts

This explosion of yumminess is a must try! This was my first attempt at making this salad and I totally fell in love with all the tastes and colours it has to offer. I am delighted to offer this recipe to you all after many requests. This salad will certainly wow your friends and family so I hope you all give it a go! Here we go everyone:-


1 cup uncooked red quinoa, rinsed in a fine-mesh colander 2 cups water 1 can chickpeas, rinsed and drained 1 medium cucumber, seeded and chopped 1 medium red capsicum (red bell pepper), chopped ¾ cup chopped red onion 1 cup finely chopped parsley ¼ cup olive oil ¼ cup lemon juice 1 tablespoon red wine vinegar 2 cloves garlic, finely chopped

1 tsp of zero calorie sweetener (or brown sugar) ½ teaspoon fine sea salt Freshly ground black pepper, to taste 1-2 Tbsp of Hemp Up NZ organic Hemp hearts

In a large serving bowl, combine the chickpeas, cucumber, bell pepper, onion and parsley. Set aside. In a small bowl, combine the olive oil, lemon juice, vinegar, sugar, garlic and salt. Whisk until blended, then set aside. Once the quinoa has cooled down, add it to the serving bowl of ingredients. Drizzle the dressing on top. Toss until the mixture is thoroughly combined. Season with black pepper, to taste, and add more salt. Finally, add those lashings of NZ organic hemp hearts for an extra nutritional boost and nutty flavour! Let the salad rest for 5 to 10 minutes before serving to let the flavours sink in. The next day it tastes even better!! This salad keeps well in the refrigerator, covered, for about 4 days. Serve chilled or at room temperature.
