Butternut Salad with Hemp Hearts

This delicious low-carb salad is an explosion of colour and flavour and can be enjoyed all year round. This salad can be enjoyed cold or slightly heated to accompany any dish or as a meal on it's own.
1/2 butternut, cubed
1/2 red onion, sliced
1/2 small courgette, sliced
Small handful of spinach
1/4 cup of sunflower seeds
2 TBSP hemp hearts
Salt n Pepper
Roast off or fry butternut in olive oil and place in bowl. Fry sunflower seeds for 2 minutes.
Prepare all other veges. Throw it all in a bowl and top with lashings of hemp hearts.
Optional: Add a dressing or your own style mayo. I suggest trying our Lemon Hemp Seed Oil Dressing.
