Super yummy creamy roasted beetroot hummus featuring lashings of NZ hemp hearts. What makes this recipe even better is it's striking hot pink colour and kick of garlic and nuttiness with the hemp hearts! Simple to make, you can wow your guests when you present this awesome dip! The hemp hearts give it an extra boost of nutrition and those who eat hemp hearts already, know that the mild nutty taste is not overpowering and delicious with anything.
Are you ready for my secret recipe!!!
Ingredients
1 fresh beetroot
1 can cooked chickpeas
half a squeezed lemon
2-3 cloves of garlic (garlic lovers, go for gold!)
1 Tbsp tahini
1/4 cup olive oil
1/2 tsp cumin
a few sprigs of parsley and coriander
salt n pepper to taste
Throw it all in a blender, whiz, done! As easy as that. In this particular recipe, I did actually add feta into the mix, which is optional.
Top with crumbed feta, oil (whether hemp seed oil or olive) and more hemp seeds. Fabulous as part of any platter, on crackers, pita or just as a general spread on anything!
